The traditional South Indian filter varies in size, shape, and material across India. By standardising it (72.5mm diameter), SOFI ensures consistency, allowing people worldwide to create and share recipes. This reimagined filter raises the bar and promotes innovation in modern coffee brewing.

The Weiss Distribution Technique (WDT) is one of the most effective ways to distribute coffee grounds. Using 0.25–0.4mm needles, the WDT tool breaks up clumps and creates an even bed, ensuring uniform extraction.

While the band does significantly improve handling of the brewer it can become fairly warm if the top chamber is filled up with very hot water. This scenario shouldn’t arise when brewing the recommended dose of 15 – 25g.

Pour-over brewers like the V60 have ridges that cause water to slip past the coffee bed, a phenomenon called bypass, which lowers extraction. Low or no-bypass brewers like the KŌNO and Tricolate avoid this, ensuring full contact. The South Indian filter, long in use, is also a no-bypass brewer, directing all water through the coffee bed.
