CHEMEX

The Chemex is a must have "Slow coffee" machine. It is very easy to use and allows you to prepare a sweet and aromatic coffee

MATERIALS

Chemex Coffee Maker
Chemex paper filter
A kettle
A stopwatch
A coffee grinder
A spatula
A kitchen scale
A mug or a coffee server

WATER / COFFEE RATIOS

60g of coffee for 1L of water or 30g of coffee for 50cl of water

PREPARATION

Start by molding 30g of coffee to obtain medium fine grind.

Heat a little more than 30cl of water until simmering (92°c - 94°c).

Place your filter in the Chemex and rinse thoroughly with hot water. This will remove the taste of paper, so that it is not transmetted to the coffee. It will also warm up your container.

Empty the hot water from the Chemex and place the Chemex with its filter and coffee on the scale. Reset the scale.

Make a pre-infusion of 40 seconds while pouring 60g of water. Make sure to wet all the coffee. If bubbles are visible on the surface of the coffee, it means that your coffee is degassing and it is a sign of its freshness. With the spatula, rotate to submerge all the coffee.

Pour the rest of the water gradually from the center outwards, without touching the filter paper until the scale reaches 500g. The extraction should last 3 minutes 30 to 4 minutes.

Remove the filter and stir the coffee in the Chemex to homogenize it..

Serve and enjoy!.

NB : if the extraction takes too long, it means that the grind is too fine, and vice versa if it is too quick it is that the grind is too thick.
